THALYSIA* GREEK HONEY is an unadulterated food which bees produce naturally. We only package it after a very light filtration, just to get the bee wings etc out, without heat or other chemical process or admixture. We do not blend, pasteurize, add or take anything out of it. It is raw, 100% natural honey. Bees carry flower pollen and forest tree honeydew into their hive, enrich them with their own secretions and then store it in the wax honeycombs until it becomes mature for consumption.

The Bad, the Illegal, the Fake and the Ugly: Due to lax legal definition on what is classified as honey, many products are falsely labeled as "honey" though in reality they only contain small to minute quantities of natural bees honey admixed with corn syrup and other molasses sometimes upwards of 95%. Many other brands carry Chinese "honey" which is the lowest quality internationally. Chinese honey has been pasteurized and highly heated (destroying in the process all the vitamins, antibacterial and antioxidant components that make honey such a good and healthy food, leaving just the calories) in order to filter out the pollen. The combination of pollen in honey acts as a marker that betrays its location and origin. Since the US government has imposed a 260% anti-dumping tariff on Chinese honey, Chinese exporters work closely with unscrupulous importers and easily bypass the tariffs, importing cheap (and worthless) Trojan horse Chinese honey via Turkey and Germany but not only.
At the same time Chinese honey companies have set up shop in Ukraine, and Ukraine has started importing (and exporting) "imitation honey". No wonder those bear-shaped honey bottles are so cheap : Imitation honey meets corn syrup, and partners with Chinese resin process heated honey!
On another front, the hype of Manuka Honey is holding strong, with prices going through the roof at the counter, and with New Zealand casually exporting tone-loads more Manuka honey than it is actually producing.

It is the last honey of the year, harvested in early winter. It is dark caramel, almost black in color, pungent and bitter, with a distinct bitter sweet aftertaste. Its reported beneficial biological and antiseptic properties have been put to use in traditional homeopathic medicine since antiquity.
